Pizza

Last week I started making pizza at home. Our landlord finally remodeled our kitchen so I'm all stoked to cook in it. This was my first attempt at making pizza from scratch at home. I had a few pizza jobs in the old timey days but this only helped prepare me a little bit. Long story short I'd give those pizzas a B minus. My son Rhodes thought it was good but he's 7.
It wasn't that any one ingredient was off but the mix was off. Well the cheese was not quite right but I can't make cheese from scratch. The point is it's a delicate balance and if you have too much of one thing it can make the other thing seem buried or taste a little off. Making pizza is a lot like mixing music and pizza is life and balance is everything. Chew on that.
